setting up Exchange to host email

I want to start hosting our email in house.  I currently have our email hosted by Covad.  I have an Exchange 2003 server running on the network ( 2003 AD) but it is only used to share addressbook and calanders. There will be about 50 users on the Exchange server.  It is a Power Edge 700, 2.8GHz. 1GB RAM.  The users are running Outlook 2003 with all mail stored in a .pst file on the server.  
Some are running Outlook on laptops and their .pst is on the local C drive.
My questions are as follows:
 Is this machine powerful enough to handle the load of 50 users?

What are the steps to make the change to in house hosting without too much interuption of email service?

What changes do I need to make to DNS with Covad?

Is there a way the laptop users can open Outlook when out of the office, and see their email without being connected to the Exchange server and not through Outlook Web Access? I think Outlook can create and .ost file that is local and updates with the Exchange server.  Company owner wants to see her email even if there is no internet connection, like when driving.

What is a good antivirus and anti spam program that works well with Exchange?  Currently using Symantec Corporate on workstaions and servers.

What speed Internet connection do I need to handle the 50 users and Web Access?

Include anything I may have forgotten to ask.
