How do I get vim to have color when using an ssh client?

I installed CentOS 4.4, booted to a desktop, opened a command line in a window, and then used vi to edit a batch file. It had syntax coloring. I had never seen that before when I have used vim via ssh before.

I normally use ssh to connect to a linux or solaris system and use vi to edit stuff. This is the first time that I've installed a linux system locally (meaning I'm touching the keyboard that really connects to the system directly) in about 10 years.

I tried modifying my ssh connection to use ansi emulation. This makes some things a bit more colorful (the command prompt has color now and ls displays a rainbow), but vim is still black and white.

I checked versions and vi maps to VIM 6.3 on the system where it's colorful and VIM 6.2 on the non-colorful system.

What should I do to make it colorful?
