Does iTunes keep multiple iPhone backups?

I am having terrible iPhone difficulties all of a sudden and wonder whether this (&*^%^%) iTunes keeps multiple backups.

History:
- Upgraded iPhone to 2.0.1 several days ago - worked fine and all was great until turned my phone on this morning.
- This morning, most of my apps will not load - they show their opening banner screen and then return to the Home screen. However, Safari, iPod, Contacts etc work fine.
- When I connected my iPhone to Mac this morning, it did a backup/sync - 105 minutes later it finished.
- My chief concerned is the data I have stored in 1 app (OmniFocus - a GTD / todo tool)

Now I'm wondering whether the backup which took place this morning overwrote any previous backup and thereofore, have I lost the ability to retored from a good data situation.

This iPhone gadget is not stable enough to base one's work life on..... and iTunes sucks unbelievably !!

Please help.
